Do sturgeon fish taste good. I think the changes in flavor is related to what the sturgeon is foraging on. The United Nations Food and Agriculture Organization has clearly defined that fish roe fish eggs not coming from the sturgeon family is not a caviar but a caviar substitute. Sturgeon is supposed to be good.
